Entropy Wheat

How it was made:
Grumpy's Wheat Kit
300g of Malted wheat Mashed and Sparged to 6L
500g of Dry Malt Extract
500g of dried corn syrup
12g of cascade hops boiled for 10 minutes and added to fermenter
yeast as supplied

The 2L of mash juice and 4L of sparge was boiled with the DME and corn syrup for 40 minutes with hops added for the last 10 and kit at flame out. Partial wort was cooled by dunking the pot in ice/water for 4 minutes and then added to the ferm with water tpo 23L. temperature was 28 degrees and yeast (started in a bottle) was pitched. Using evaporative cooling temperature was lowered to 22 degrees. VERY high activity after 30 odd hours, more than a bubble a second... very intense!

Opened one last night (6 days after secondary was finished...) doing real well... least home brew tasting home brew I have had!

OK WE ARE ROLLING:
Morgnans Amber ale Kit
Caramalt
Light Dry Malt Extract
Honey! (or course)
and Fuggles Hops steeped for 5 minutes!
OG was 1041 (but I have a feeling it might have been higher due to an incorrect correction for temperature) FG is 1011 giving an alcohol content of ~4%. Tasted real nice right out of the fermenter, nice and malty with the hops ballancing nicely, which is a slight worry as the bitterness might mellow in time. When bottling the head was a problem so I needed to bottle in two passes, mind you the head is a thing of beauty and I hope it retains it during the conditioning proccess. I ended up getting just over two cases (50 odd beers) from this one, very happy... Bottles went down 18/12/2005. I plan to (prematurely of course) crack open one of these on Xmas Day!!

First Fumbles with Fuggles

Coopers Larger Kit

Yeast as supplied (It really is an Ale yeast)

700g of dextrose

300g Maltodextrin

On day 3 of the ferment a "tea bag" of Fuggles hops, steeped in 90 degree water for 15 minutes was added

22 Longnecks, 9 340ml bottles

First impressions: I can taste the malt from the kit but it is still to bitter, but that seems to be mellowing with age... there is a very slight sweetly off taste
